Ingredients:
1 lb of lotus root
5-6 chicken/ pork bones (could be replace with 8-10 chunks of meat with bones)
1/2 cup of nuts
black moss (a small piece about 1in x 2in)
8-10 dried oysters (optional) (soak in hot water for 15-20 minutes)
To taste:
2 tbsp of soy sauce
A pinch of salt
Few dashes of pepper
- Slice the lotus root and clean the inner parts. (there might be sand in between the holes)
- Rinse the meat with hot water (tap hot water is fine) for several times (to remove the strong smell of the meat).
- Place all the ingredients (except black moss) into a 5-quart pot and fill the pot with water until 3/4 full.
- After the soup has boil, let it continue boil for 8-10 minutes under high heat.
- Then, add in the black moss and dry oysters, change to medium heat and let it simmer for an hour.
- Add in the soy sauce, salt and pepper to taste. (you can add more according to your taste preference)
