Stir Fry Sliver Needle Noodles 炒老鼠粉

 Stir Fry Sliver Needle Noodles 炒老鼠粉 Serves (2-3)


Ingredients:
1 packet of Silver Needle Noodles (450g) 老鼠粉
1/4 lbs of minced pork 肉碎
5-6 dried mushrooms 蘑菇
6-8 black fungus 木耳
1 tbsp of minced garlic 蒜泥
2 eggs 鸡蛋

Sauce 酱汁:
2 tbsp of soy sauce 酱油
1 1/2 tbsp of dark soy sauce 黑酱油
1 tbsp of fish sauce 鱼露
A pinch of sugar 糖
A pinch of salt 盐
1/2 cup of stock 鸡汤

Instructions:
  1. Soak the dried mushrooms in hot water in a bowl. Soak the black fungus as well in warm water. About 30 minutes for both.
  2. Then slice up the mushrooms and black fungus. Set aside.
  3. Prepare the silver needle noodles as per instructions. (I microwaved mine for 3 minutes)
  4. Heat up 2 tbsp of oil in the Frying Pan, fry the minced garlic until fragrant.
  5. Add in the minced pork and stir fry for several minutes. Separate the minced pork.
  6. Then add in the mushrooms and black fungus. Put in a tbsp of soy sauce.
  7. Add in the noodles and stock, stir fry until they have separated.
  8. Add in the dark soy sauce, soy sauce, fish sauce, salt and sugar. Turn to medium heat and mix well. Simmer for 5 minutes.
  9. Add in the eggs on top of the noodles and close the lid for 3-5 minutes.
  10. Mix them all together and stir fry for another 2-3 minutes.
步骤:
  1. 把蘑菇浸泡在热水里约30分钟。另外把黑木耳浸泡在温水里约30分钟。
  2. 把蘑菇和黑木耳却成片。
  3. 准备好老鼠粉。(我放进微波炉里约3分钟)
  4. 放入2汤匙的油在锅里,爆香蒜泥。
  5. 加入肉碎,炒一会儿。把肉碎分开。
  6. 然后放入蘑菇和黑木耳。加一汤匙的酱油。
  7. 加入老鼠粉和鸡汤,炒到老鼠粉已分开。
  8. 然后加入黑酱油,酱油,鱼露,少许盐和糖。把火转去中等,搅拌均匀。关盖煮约5分钟。
  9. 打好鸡蛋然后放在老鼠粉上,关盖约3-5 分钟。
  10. 搅拌均匀,炒约2-3分钟。
