Stir Fry Sliver Needle Noodles 炒老鼠粉 Serves (2-3)
1 packet of Silver Needle Noodles (450g) 老鼠粉
1/4 lbs of minced pork 肉碎
5-6 dried mushrooms 蘑菇
6-8 black fungus 木耳
1 tbsp of minced garlic 蒜泥
2 eggs 鸡蛋
Sauce 酱汁:
2 tbsp of soy sauce 酱油
1 1/2 tbsp of dark soy sauce 黑酱油
1 tbsp of fish sauce 鱼露
A pinch of sugar 糖
A pinch of salt 盐
1/2 cup of stock 鸡汤
- Soak the dried mushrooms in hot water in a bowl. Soak the black fungus as well in warm water. About 30 minutes for both.
- Then slice up the mushrooms and black fungus. Set aside.
- Prepare the silver needle noodles as per instructions. (I microwaved mine for 3 minutes)
- Heat up 2 tbsp of oil in the Frying Pan, fry the minced garlic until fragrant.
- Add in the minced pork and stir fry for several minutes. Separate the minced pork.
- Then add in the mushrooms and black fungus. Put in a tbsp of soy sauce.
- Add in the noodles and stock, stir fry until they have separated.
- Add in the dark soy sauce, soy sauce, fish sauce, salt and sugar. Turn to medium heat and mix well. Simmer for 5 minutes.
- Add in the eggs on top of the noodles and close the lid for 3-5 minutes.
- Mix them all together and stir fry for another 2-3 minutes.
步骤:
- 把蘑菇浸泡在热水里约30分钟。另外把黑木耳浸泡在温水里约30分钟。
- 把蘑菇和黑木耳却成片。
- 准备好老鼠粉。(我放进微波炉里约3分钟)
- 放入2汤匙的油在锅里,爆香蒜泥。
- 加入肉碎,炒一会儿。把肉碎分开。
- 然后放入蘑菇和黑木耳。加一汤匙的酱油。
- 加入老鼠粉和鸡汤,炒到老鼠粉已分开。
- 然后加入黑酱油,酱油,鱼露,少许盐和糖。把火转去中等,搅拌均匀。关盖煮约5分钟。
- 打好鸡蛋然后放在老鼠粉上,关盖约3-5 分钟。
- 搅拌均匀,炒约2-3分钟。
