Chinese Fermented Bean Curd Fried Pork


Ingredients
25-30 pieces of pork chunks (pork shoulder/butt part is the best)

Sauces to Marinade 1:
2 cubes of fermented bean curd
1 tbsp of fermented bean curd sauce
1 tbsp of oyster sauce
1 tbsp of chinese cooking wine (shao xing wine)
1 tbsp of sugar
Little bit of five spice powder
1 tsp of sesame oil
1/2 tbsp of soy sauce

Sauces to Marinade 2:
1 large egg
2 tbsp of flour (I use all purpose flour)
4 tbsp of corn flour
2 tbsp of warm/cold water

Steps:

  1. Rinse the meat with hot water (tap hot water is fine) for several times and soak it in hot water for about 10 minutes (to remove the strong smell of the meat).
  2. Mix the "Sauces to Marinade 1" well and marinade for 3-4 hours or overnight preferably.
  3. Add in "Sauces to Marinade 2" to the pork and mix well.
  4. Heat up the oil in a pot (7~8), and put in the pork and fry about 6-7 minutes or until golden brown.
  5. Place fried pork onto paper towel to absorb the oil away and then serve. :)
