Stir Fry Sliver Needle Noodles 炒老鼠粉

 Stir Fry Sliver Needle Noodles 炒老鼠粉 Serves (2-3)


Ingredients:
1 packet of Silver Needle Noodles (450g) 老鼠粉
1/4 lbs of minced pork 肉碎
5-6 dried mushrooms 蘑菇
6-8 black fungus 木耳
1 tbsp of minced garlic 蒜泥
2 eggs 鸡蛋

Sauce 酱汁:
2 tbsp of soy sauce 酱油
1 1/2 tbsp of dark soy sauce 黑酱油
1 tbsp of fish sauce 鱼露
A pinch of sugar 糖
A pinch of salt 盐
1/2 cup of stock 鸡汤

Instructions:
  1. Soak the dried mushrooms in hot water in a bowl. Soak the black fungus as well in warm water. About 30 minutes for both.
  2. Then slice up the mushrooms and black fungus. Set aside.
  3. Prepare the silver needle noodles as per instructions. (I microwaved mine for 3 minutes)
  4. Heat up 2 tbsp of oil in the Frying Pan, fry the minced garlic until fragrant.
  5. Add in the minced pork and stir fry for several minutes. Separate the minced pork.
  6. Then add in the mushrooms and black fungus. Put in a tbsp of soy sauce.
  7. Add in the noodles and stock, stir fry until they have separated.
  8. Add in the dark soy sauce, soy sauce, fish sauce, salt and sugar. Turn to medium heat and mix well. Simmer for 5 minutes.
  9. Add in the eggs on top of the noodles and close the lid for 3-5 minutes.
  10. Mix them all together and stir fry for another 2-3 minutes.
步骤:
  1. 把蘑菇浸泡在热水里约30分钟。另外把黑木耳浸泡在温水里约30分钟。
  2. 把蘑菇和黑木耳却成片。
  3. 准备好老鼠粉。(我放进微波炉里约3分钟)
  4. 放入2汤匙的油在锅里,爆香蒜泥。
  5. 加入肉碎,炒一会儿。把肉碎分开。
  6. 然后放入蘑菇和黑木耳。加一汤匙的酱油。
  7. 加入老鼠粉和鸡汤,炒到老鼠粉已分开。
  8. 然后加入黑酱油,酱油,鱼露,少许盐和糖。把火转去中等,搅拌均匀。关盖煮约5分钟。
  9. 打好鸡蛋然后放在老鼠粉上,关盖约3-5 分钟。
  10. 搅拌均匀,炒约2-3分钟。

Salted Egg Yolk Chicken 咸蛋奶油鸡

Salted Egg Yolk Chicken 咸蛋奶油鸡 (Serves 4)
Ingredients 材料:
2 piece of chicken breast 鸡胸肉 (or chicken leg meat 或鸡腿肉)
4 tbsp of butter 奶油
4 salted egg yolks 咸蛋黄 (3 if its large 如果很大三粒就够了)
3 tbsp of minced garlic 蒜蓉
8-10 curry leaves 咖喱叶 (I couldn't find them)
5-6 red chilies 红辣椒 (remove the seeds inside)

Marinade 腌料:
2 eggs 鸡蛋
1 tsp of salt 盐
2 tsp of sugar 糖
2 tsp of shao xing wine 绍兴酒
2 tbsp of corn starch 玉米淀粉

Sauce 调味料:
1/2 cup of evaporated milk 淡奶 (I used whole milk, taste good too 我用全脂奶,一样好吃)
1 tsp of salt 盐
1 tbsp of sugar 糖

Instructions:
  1. Marinate the chicken for 1-2 hours.
  2. Dredge chicken pieces in corn starch.
  3. Using the deep fryer, heat up the oil at 356 F (180 C). Deep fry chicken till its golden brown. Drain the chicken and transfer them onto paper towels to remove excess oil.
  4. Separate the salted egg yolk and put into a bowl. Steam it for 4-5 min.
  5. Smash the steamed salted egg yolk.
  6. Dice chili and garlic.
  7. Heat up the Frying Pan and add in the butter
  8. Fry the chili, garlic, and curry leaves till crisp and fragrant.
  9. Add the salted egg yolks and cook till the mixture becomes bubbly. Then add in the milk.
  10. Put the fried chicken to the pan and toss till evenly coated.
步骤:
  1. 将鸡胸肉切小片状. 加入腌料腌1-2个小时.
  2. 将腌好的鸡肉片沾上沾料.
  3. 热油在油炸锅里356 F (180 C),将鸡肉片炸至金黄色, 沥干油备用.
  4. 把咸蛋黄分开,放进碗里。蒸4-5 分钟。
  5. 压碎蒸好的咸蛋黄。
  6. 在另一个锅子里将牛油煮溶, 把咸蛋黄碎炒至起泡后才加入蒜茸, 咖喱叶还有小辣椒炒拌至香.
  7. 加入调味料以及鸡胸肉, 不断拌炒至香, 即可摆在盘上就可以开餐咯.

Marmite Chicken 妈蜜鸡


Marmite Chicken 妈蜜鸡 (Serve 4-5)
Ingredients 材料:
6-7 chicken drumsticks 鸡腿

Marinate 腌料:
2 tbsp of oyster sauce 蚝油
2 tbsp of light soy sauce 酱油
1 tbsp of Chinese cooking wine 绍兴酒
1 tsp of sesame oil 麻油
4 tbsp of corn starch 玉米淀粉
A dash of white pepper 胡椒粉

Marmite Sauce 妈蜜汁:
3 tbsp of marmite 妈蜜
2 tbsp of maltose 麦芽糖
2 tbsp of honey 蜜糖
2 tbsp of light soy sauce 酱油
1 cup of stock 鸡汤

Instructions:
  1. Chop the chicken drumsticks into half.
  2. Rinse the chicken with hot water (tap hot water is fine) for several times and soak it in hot water for about 10 minutes (to remove the strong smell of the meat).
  3. Marinate the chicken for about an hour.
  4. Fry the chicken in 2 batches until golden and crispy in a deep fryer. Remove the fried chicken and set aside.
  5. Mix the marmite sauce all together and put them in a Frying Pan in high heat. Put heat to medium when it boils, and stir it from time to time until it turns thicker.
  6. Bring the chicken back into the Frying Pan. Mix the chicken and sauce together, and make sure all the chicken is well coated with the sauce.
步骤:
  1. 把鸡腿砍一半。
  2. 用烧水过鸡腿几次,然后浸在热水里约10分钟(为了去除肉的重味)。
  3. 腌制鸡腿约一个小时。
  4. 热油在油炸锅里356 F (180 C),将鸡肉片炸至金黄色, 沥干油备用.
  5. 把妈蜜汁搅拌均匀,放进锅子里,煮到汁滚。然后换去中等火,煮到妈蜜汁变稠。
  6. 把鸡放回入锅子里,确保每一块鸡腿都沾上妈蜜汁。

Fried Tomato Eggs 炒番茄蛋



Fried Tomato Eggs 炒番茄蛋 (Serves 3-4)
Ingredients:
1 big tomato 大番茄
5 large eggs 鸡蛋
4 tbsp of tomato sauce 番茄酱
1 1/2 tbsp of sugar 糖
1/4 cup of water 水
1 tsp of corn starch 玉米淀粉
A pinch of salt  少许盐

Optional:
Spring Onions 葱花

Instructions:
  1. Boil 2 cups of water in a small pot. Cut an X on the tomato. When the water has boiled, put in the tomatoes. Let it boil for 3-4 minutes.
  2. Remove the tomatoes from the pot and peel off the skin. Cut them into 8 pieces each.
  3. Heat up 2 tbsp of oil in the Frying Pan, add in the spring onions, stir fry for a minute.
  4. Add in the tomatoes, stir for a minute. Then add in 1/4 cup of water.
  5. Add in the tomato sauce and sugar, and let it cook for 3-4 minutes.
  6. Mix the corn starch with 1-2 tbsp of water, then pour it into the tomatoes.
  7. Remove the tomatoes from the Frying Pan.
  8. Add a pinch of salt in the eggs, beat them up.
  9. Heat up 2 tbsp of oil in the Frying Pan,  put in the eggs. Do not fully cook the eggs, move them every 5 seconds.
  10. After a minute, add in the tomatoes and mix them all together!
  11. Sprinkle some spring onions on top and serve. :)

步骤:
  1.  在一个小锅子里,煮烧两杯水。在番茄上刮两刀(x)。水滚了后,放入番茄。让它煮滚 3-4 分钟。
  2. 拿出番茄,剥开外皮。切成八份。
  3. 热两汤匙油,加入葱花,炒一分钟。
  4. 加入番茄,炒约一分钟。然后,加入四分之一杯水。
  5. 加入番茄酱和糖,让它煮约3-4分钟。
  6. 参太白粉和1-2汤匙的水,然后倒入锅里。
  7. 倒出番茄,搁放一边。
  8. 加入少许盐进蛋里,然后搅拌均匀。
  9. 热两汤匙的油在锅里,放入鸡蛋。不要完全煮熟鸡蛋,每隔五分钟炒一炒它。
  10. 约一分钟后,加入番茄,然后搅拌均匀!
  11. 倒入盘里,然后撒上葱花。:)
