Salted Egg Yolk Chicken 咸蛋奶油鸡

Salted Egg Yolk Chicken 咸蛋奶油鸡 (Serves 4)
Ingredients 材料:
2 piece of chicken breast 鸡胸肉 (or chicken leg meat 或鸡腿肉)
4 tbsp of butter 奶油
4 salted egg yolks 咸蛋黄 (3 if its large 如果很大三粒就够了)
3 tbsp of minced garlic 蒜蓉
8-10 curry leaves 咖喱叶 (I couldn't find them)
5-6 red chilies 红辣椒 (remove the seeds inside)

Marinade 腌料:
2 eggs 鸡蛋
1 tsp of salt 盐
2 tsp of sugar 糖
2 tsp of shao xing wine 绍兴酒
2 tbsp of corn starch 玉米淀粉

Sauce 调味料:
1/2 cup of evaporated milk 淡奶 (I used whole milk, taste good too 我用全脂奶,一样好吃)
1 tsp of salt 盐
1 tbsp of sugar 糖

Instructions:
  1. Marinate the chicken for 1-2 hours.
  2. Dredge chicken pieces in corn starch.
  3. Using the deep fryer, heat up the oil at 356 F (180 C). Deep fry chicken till its golden brown. Drain the chicken and transfer them onto paper towels to remove excess oil.
  4. Separate the salted egg yolk and put into a bowl. Steam it for 4-5 min.
  5. Smash the steamed salted egg yolk.
  6. Dice chili and garlic.
  7. Heat up the Frying Pan and add in the butter
  8. Fry the chili, garlic, and curry leaves till crisp and fragrant.
  9. Add the salted egg yolks and cook till the mixture becomes bubbly. Then add in the milk.
  10. Put the fried chicken to the pan and toss till evenly coated.
步骤:
  1. 将鸡胸肉切小片状. 加入腌料腌1-2个小时.
  2. 将腌好的鸡肉片沾上沾料.
  3. 热油在油炸锅里356 F (180 C),将鸡肉片炸至金黄色, 沥干油备用.
  4. 把咸蛋黄分开,放进碗里。蒸4-5 分钟。
  5. 压碎蒸好的咸蛋黄。
  6. 在另一个锅子里将牛油煮溶, 把咸蛋黄碎炒至起泡后才加入蒜茸, 咖喱叶还有小辣椒炒拌至香.
  7. 加入调味料以及鸡胸肉, 不断拌炒至香, 即可摆在盘上就可以开餐咯.
